I checked in MidiEditor. It does not appear to have this functionality.
The view only allows you to zoom in and out, and scroll up, down, left, and right.

You can contact the author to suggest adding a feature:

For anyone curious, "folding" is used in Ableton (and presumably other editors) to hide certain available notes from the piano roll editor window. For example, you have a device that only supports certain note ranges, you can hide the notes not supported by your device. In Ableton, it will also hide any available notes from the piano roll editor that are not currently used in your track, giving you a piano roll view of only the note values that have actual notes present.

I have several free MIDI editors (Anvil Studio, Domino, MidiEditor, and Sekaiju), and none of them support folding. The closest is a feature in Anvil Studio that will let you specify the start and end note of the piano roll, and how many notes to display at one time. It doesn't hide unused notes.

I also have Reaper and MuseScore 3, and if either of them support it, I do not know as they are too complicated for my needs.

A Google search suggested that Reaper may be able to do something like you want. Also, I saw mention of Zynewave Podium (which is a DAW like Reaper, not just for MIDI). Other ones I found are all paid products. They have various different ways of referring to the feature, such as "Fold", "Hide Unused Frequencies", "'hide unused or unnamed note rows'", etc.

This is what I understand as a "folding keyboard": https://youtu.be/iJqYMp9pGr4
