This is a REALLY open ended question about a product I'm working on (still & again) named SoulPedal(R). I'm looking for some user input from MIDI explorers because I mainly know guitar and drums.
SP is a wireless insole controller for your shoe, and the receiver has MIDI out, motion and pressure data out, and controls a very custom analog Wah-wah pedal. One example might be to combine with a Keytar to free up the other hand. Keep in mind, this is in your shoe so that you're free to move around. Having a wireless pedal when you sit or stand in one spot probably doesn't make sense. So far I've played with a Controller Change Ch-01, Pitch Bend, and a Kick Drum Note. Something tells me I'm missing a Bank Select or something obvious. Consider use of MIDI for ANY instrument, including guitar and high-end gear. What would they need?
The pedal will turn on/off with a toe kick, then the MIDI would output based upon foot pressure. For now I can only select up to 5 or 6 options (9 pos switch). Purpose of building these units is to explore what people will do with it. Ideally, I would add Bluetooth and open this up, but that depends how we do after Beta.
True story, 3 of us went to NAMM in '14 or '15, and I met the CEO of MIDI at the booth. He liked the idea but warned me of 2 things: "It has to work well, and there's no money to be made in this industry"... And I'm still going after this thing despite. The coolest part is being able to set your pedal sensitivity or feel.
