If using the UMP MIDI 2.0 Voice Channel messages with expanded fields, the Velocity resolution is 16 bits or 65535 steps which is over 500 times the resolution of MIDI 1.0.  However it is difficult with current sensor technology to get much more than 10 or 11 bits of clean data from Velocity sensors. 

People who attended NAMM 2023 and 2024 were able to experience this greater resolution by playing the Roland A88MKII and the Synthogy's Ivory software which both had special upgrades to enable MIDI 2.0.
