Cakewalk Rapture Pro is one of my favourite VST instruments.
Unfortunately, it is not currently available for purchase, but hopefully BandLab will make it available again.

Garritan Personal Orchestra v.5. is the one I use most often.

FL Studio, but that's just opinion. It is the only one I've used and have gotten comfortable with.

I've been using Steinberg, but I'm kind of over it. Definitely open to recommendations!
