I've had a quick look on the internet, and I note:

ScanScore would seem to read in the scan, I assume as a digital/graphical image, but it is capable of saving the data as MusicXML, which is a recognised format that other software can use. So, if you saved such a file, this could then be imported into something else.

For example, a package called MuseScore can read in a midi file, and display the result as a score, but it is also capable of importing MusicXML. Having read in a MusicXML file, I'm sure that this could then be saved as Midi. I would thint it would be likely, and probable VERY desirable, that you would make various changes (additions) to the data while it is in MuseScore to provide for Patch settings, and whatever else, so that the final midi file would be more useful.

As an alternative, the MusicXML file is plain text, you could probably edit a lot of extra detail into that. Or if you're more comfortable with the software you use to play the final midi file, you might leave all the fine tuning till then.

Other software packages are able to import MusicXML files, so you may be able to skip a step?

OK,

See what happens.

I downloaded a MusicXML file, then opened it using MuseScore which I have installed here. Displayed fine.

I then saved the file as a midi, which it did OK. I checked in the resultant midi file and noted that there were some standard midi settings there, incl a patch setting for piano, which may or may not be appropriate for the piece. Easily changed if not. Not tried playing the file yet, but I see no reason why it would not.
